Add a pinch of salt and optionally add a dash of ground black pepper, nutmeg and cumin powder. Crumble the tofu up in to small pieces of assorted sizes.

- After heating the tofu in the microwave for about 3 minutes, drain out the water using a flat dish as a weight. Press out excess water using a kitchen towel, then crumble the tofu.
- Finely chop the shiitake mushrooms, onion, and ginger. Sauté them in vegetable oil, then mix with the tofu, salt, pepper, and katakuriko. Form into patties.
- Using a little bit of vegetable oil, brown both sides of the burger over medium heat. Serve with teriyaki sauce to taste.

Mix up the nutritional yeast, olive oil, soy sauce, garlic powder, onion powder, chili powder and smoked paprika, creating a paste and add to the tofu.
