In a Dutch oven over medium heat, melt butter and add oil. Add bacon pieces to fat and cook, stirring often, until bacon starts to brown. Add onion, garlic, carrots, celery, worcestershire, and herbs and spices. Sprinkle beef with salt and pepper.

Add onion, garlic, carrots, celery, worcestershire, and herbs and spices. Sprinkle beef with salt and pepper. In an ovenproof Dutch oven, heat oil over medium heat; brown beef in batches. Place the flour on a plate or in a plastic bag with plenty of salt and black pepper and toss the meat in it until well coated. Add a splash of oil to a large casserole pan and place it over a medium heat.
