This recipe is my Dad's recipe that he's been making for years.

Steps to make Dad's Mild Chili:
  1. Fry meat until thoroughly cooked, drain if necessary.
  2. In large pot mix cooked meat, beans, salsa, seasoning and corn until hot.
  3. For spicier chili, substitute medium beans, salsa, and/or seasoning for the mild. Top with choice of Mexican blend cheese, sour cream, crackers, etc.

Technically, though, this isn't really a moose recipe. This recipe is my Dad's recipe that he's been making for years. It is always a hit in our house and one of my favorite dishes. This chili is pretty spicy, so if you can't take the heat, reduce the amount of red pepper and cayenne pepper. Last thing – you have to have this chili over rice, otherwise it's just not complete!
